Great Balls of Fire Chocolate Pudding Cupcakes

Holy balls.  Holy ‘effen great balls of fire!!  The past 48 hours have been crazy up the wazoo!!  Sorry about the lateness, folks!  I know I was supposed to post on Thursday but I was running around like a maniac trying to finish everything.  Soooo, enjoy this Friday post, y’all :P

One of the reasons for all the craziness was I found out Tuesday night that all the photos for my next two posts were gone.  Completely gone.  I had a shitty phone at the time so I figured I’d use my mom’s phone to take pictures of all my delicious baked goods.  Well somehow, the ENTIRE month of November of pictures got deleted.  Not just mine but her photos as well.  I know you feel my pain.  I know you’re screaming “WHYYYYYYYY?!?!” in my name.  Thank you.

Let’s be honest.  I was livid.  I wanted to point fingers.  I wanted to eat a million cupcakes I was so mad.

Then I thought, ″What’s the problem here, Vyvacious Bodacious…?″  Now you get to BAKE MORE cupcakes, it’s a WIN-WIN!! :D

In anticipation of these Chocolate Pudding Cupcakes, I present to you this AMAZING rap that my friend, Mark, composed in the comments section of my giveaway post.  Needless to say, I think the awesomeness of his rap swayed the completely arbitrary, random drawing.  Just maybe – but not really.  Enjoy folks :)  And then scroll on down for that tantalizing Chocolate Pudding Cupcake recipe I’ve been building up for a long ass time.  Expect a Brown Sugar Cloud Frosting recipe this coming weekend, yo!!

Vyvacious Rap by Mark Davis

(Uh) I was like, good gracious, cards are bodacious
Oh, Vyvacious, showing so much patience
She’s always finding the right time to cook reci-pes (oh)
Waiting for the right time to add that cheese
The bum I’m leavin’, please believe it
This rap be so bad commenters eyes be bleedin’
Should be working at the Arboretum checkin’ out the tree seasons
Lakeside, rooftop, birds we be feedin’
No deceivin’, walking around with no sleeves and rappin’ for no reason
And Vyvy likes to get up on that dance floor
Give her legs what they’ve been askin’ for (oh)
Cuz I feel like drinking tea or juice, and I swear I just saw a moose (uh uh)
After this I’m gonna stop for juice, and I think I stepped in that moose’s deuce.

Please let Mark know how much you LOOOOVE his rap because seriously, I love it to pieces.

Vyvacious || Chocolate Pudding Cupcakes with Brown Sugar Cloud Frosting

Chocolate Pudding Cupcakes

Makes 24 regular cupcakes or 48 mini cupcakes

Ingredients:

  • 1 box Devil’s Food Cake (dry mix)
  • 3/4 cup milk
  • 1/2 cup coffee
  • 2 tsp vanilla extract
  • 4 eggs
  • 1 stick unsalted butter, melted
  • 1 (3 oz) box instant chocolate Jello pudding

Equipment:

  • Large mixing bowl, hand mixer, rubber spatula, small ice cream scoop
  • Cupcake pans, cupcake liners, toothpick, cooling racks

Instructions:

  1. Combine all ingredients in a large mixing bowl.  Mix on low until dry ingredients are incorporated into wet then mix on high for another 30 seconds.
  2. Line the cupcake pans with cupcake liners.
  3. Using the small ice cream scoop, fill each liner with batter.  If you have 2 cupcake pans, feel free to use both and then swap the pans midway through baking to ensure even cookie.  Otherwise, set aside the other half of your batter to use once the first batch is done.
  4. Bake the Chocolate Pudding Cupcakes at 350 degrees F for 16-18 mins for regular cupcakes and 8-9 mins for mini ones.  Test with a toothpick, if it comes out mostly clean then remove immediately if not then bake at 1-2 minute intervals until done.  Mine personally took 16 mins.
  5. Let the Chocolate Pudding Cupcakes rest for 5 minutes then transfer to a cooling rack.

Store in a sealed container at room temperature.

Stay tuned for my next post regarding Brown Sugar Cloud Frosting that’s like fluffy heaven on these damn decadent Chocolate Pudding Cupcakes.  Seriously.

HEAVEN.  IN.  YOUR.  MOUTH.

Until next time, y’all! :)
