Bitches, here be that Brown Sugar Cloud Frosting recipe

My friends actually got offended that I didn’t say fucking in my opening line last post.  So here it is, bitches.  HOLY FUCKING GREAT BALLS OF FIRE!!!  Ya happy now?!  See…?  Feedback does you good, people ;)

So remember those Chocolate Pudding Cupcakes that I mentioned on Friday?  Well, the frosting was the talk of every party I brought those cupcakes to.  Brown Sugar Cloud Frosting to be exact.

This frosting is super light and fluffy, a characteristic I find appealing in all the homemade frostings I make.  It’s also not super duper sweet like other frostings which means you can consume this Brown Sugar Cloud Frosting by the bucketfuls.  And let me tell you, my friends did at one of the many potlucks I attended.

I brought the Chocolate Pudding Cupcakes topped with the Brown Sugar Cloud Frosting AND some easy, tasty flan (recipe coming soon! ;)) to the potluck.  One of my friends told me that if she had eaten the cupcake with her eyes closed (which is quite a sensual experience, I suggest y’all try it some time :P), she would have thought I placed some flan on top of the cupcake because of the soft, light, fluffy texture of the frosting.  Very cloud-like, huh? :)

Needless to say, the party got a little cray-cray and soon I was shooting frosting shots into people’s mouths using my trusty Ziploc bag with the tip cut off ever so slightly.  Mind you, the majority of us are close friends but there were some people there that I had never met before.  There was lots of yelling, hootin’, & hollerin’. It was hilarious AND tasty.  Do I have pictures?  Maybe.  Will I post them?  Hell no!  Let your imaginations run wild, bitches!!

I shall leave you with one of the highest compliments a coworker bestowed upon me the other day.

I was told I had to come beg for your dessert laced with crack.

That’s right, beg.  Beg and (not so) secretly hope due to your tardiness, I didn’t shove the rest in my mouth already.

Chocolate Pudding Cupcake Topped With Brown Sugar Cloud Frosting

Brown Sugar Cloud Frosting

**Frosts 12 regular cupcakes or 24 mini ones (copious amounts of frosting though)

Ingredients:

  • 1 cup milk
  • 5 TBSP all-purpose flour
  • 1 cup brown sugar (add up to another 1/2 cup if you like your frosting extra sweet)
  • 2 sticks unsalted butter (slightly softened)
  • 2 tsp vanilla extract
  • 1/2 tsp salt

Equipment:

  • Medium pot, whisk, large mixing bowl, hand mixer, rubber spatula, large Ziploc bag

Steps:

  1. Pour milk into the pot on medium-low to medium heat.  Add flour and whisk thoroughly to ensure it’s well incorporated and no clumps of flour are left.  Keep whisking slowly.  Allow mixture to thicken to a paste-like consistency (5-10 mins).  Set pot aside to cool once mixture is thickened.
  2. Combine the butter, sugar, vanilla extract, and salt in a large mixing bowl.  Mix on a low speed until well incorporated.  Use a rubber spatula to scrape down the sides.  Then beat on medium speed until it gets really fluffy (5-10 mins).  The idea is to not be able to taste the graininess of the brown sugar anymore.
  3. Add the cooled milk/flour mixture and beat on high until everything is well incorporated and super fluffy.  Keep tasting to ensure that the frosting has lost its graininess.
  4. Using a spatula, scrape frosting into a large Ziploc bag and put in the fridge.  In 15 mins, it should be good to use.  Or store the frosting in the fridge and take it out at least 45 mins before you need to use it.

I would highly recommend you eat the frosting the same day as it starts to separate after 24 hours – still tasty but not as smooth.

    That looks delicious! I love how the frosting has texture, as opposed to the sloppy goop normally seen on cupcakes.

    These look absolutely amazing, Vyv! I also love the photo of the half-eaten cupcake with teethmarks! The full effect! The frosting must be amazing. You had mentioned a gingerbread frosting before…I bet that one would be good with the chocolate pudding cupcakes too!
