Chewy Thin Mint Treats In My Mouth
There are more Vegas pictures floating around out there, I just know it. Until they’re all in my possession, I’m going to postpone my Vegas, Part 3 post (but check out Part 1 and Part 2!!). I hear all the booing and ruckus, y’all are making. Believe me, I’m making it too! However, my third post about Vegas was supposed to be mainly about the food! THE MOST IMPORTANT PART. I can’t have incomplete sets of food pictures and do a half-assed post. No no, this isn’t going to be like my half-assed Rice Krispies Treats that I made the other day.
Instead, I’m going to tantalize you with Chewy Thin Mint Treats…or rather Thin Mint Marshmallow Treats…or umm…Mint Marshmallow Treats… I can’t decide. Really. While everyone was asking me what the heck they were while devouring them in front of me, I still couldn’t come up with a name. But I don’t think people cared. In fact, just this morning I got “Well whatever the hell you call ‘em, they’re freaking bomb!!” Why thank you, kind sir! :D
I recently made Chewy Oreo Treats which is what inspired me to make these in the first place. Chewy Oreo Treats are made simply with crushed Oreos and marshmallows…BAM! So I thought, why the hell not make some Chewy Thin Mint Treats using crushed Thin Mints and chocolate-mint marshmallows?! Add some Andes Chocolate Mints as a garnish and you have yourself a weiner. Er. I mean a winner. Sorry. Freudian slip.
Chewy Thin Mint Treats
Yields approximately 30+ treats

Ingredients:
- 3 (10 oz) boxes of Keebler Grasshopper Cookies (or 30 oz of Thin Mints)
- 2 (8 oz) bags of Jet Puffed Chocolate Mint Marshmallows
- 6 Tbsps of butter, halved
- 2 (4.67 oz) boxes of Andes Chocolate Mints (equivalent to 56 pieces), divided into thirds
Equipment:
- Food processor OR Ziploc bag + rolling pin
- 2 microwave-safe bowl (1 large + 1 medium), rubber spatula
- 8×8 pan, parchment paper, large knife
Instructions:
- Line your 8×8 pan with parchment paper.
- Coarsely crush 15 oz (1.5 boxes worth) of cookies in your food processor or use a Ziploc bag and rolling pin if that strikes your fancy.
- Set aside and repeat for the other 15 oz of cookies. Keep the two batches separate.
- In a large microwave-safe bowl, heat one (8 oz) bag of chocolate mint marshmallows and 3 Tbsps of butter for 90-120 seconds.
- Quickly stir in one batch of the coarsely crushed cookies using the spatula.
- Once incorporated, press the mixture into the parchment paper-lined pan using the rubber spatula.
- Melt approximately a third of the Andes Chocolate Mints in a medium microwave-safe bowl by heating in the microwave for a minute and stirring vigorously to finish the melting process.
- Pour the melted chocolate mints onto the first layer of the cookies/marshmallow mixture and spread evenly using the rubber spatula. Let the melted chocolate sit for 15 minutes to set.
- Using the same large microwave-safe bowl, heat the other (8 oz) bag of chocolate mint marshmallows and 3 Tbsps of butter for 90-120 seconds.
- Quickly stir in the other batch of coarsely crushed cookies using the spatula.
- Once fully incorporated, press the mixture carefully on top of what’s already in your 8×8 pan. Try not to disturb the chocolate layer.
- Melt another third of the Andes Chocolate Mints like in Step 7 and spread that on top on the newly placed cookie/marshmallow layer. Press Andes Chocolate Mints into the melted chocolate in a uniform fashion if desired.
- Put the 8×8 pan into the fridge for 15 minutes to set. Make sure the bottom of the pan isn’t warm at all to the touch when removing; otherwise, leave it in the fridge for another 10 minutes.
- Cut the square block into even pieces using a large knife.
- DEVOUR.
Keep stored in an airtight container at a cool room temperature. Do not store in the fridge.

Please do! And let me know how they turn out :) They’re super simple! You can even simplify things and just make the one cookie/marshmallow layer but trust me when I say the extra little bits really make a world of difference :)

Chocolate, mint and marshmallows. My mouth is watering just looking at them. I’m like Weebs, I HAVE to make these, Vyv. This would give a whole new meaning to Christmas cookies. Only problem, I’d probably want to eat them all….

Haha, sometimes I get bored with crunchy cookies but I love the flavor so I like to experiment a little! :P Yes that’s my problem too! That’s why I hurriedly wrapped them all up all pretty and gave them away to people… ;)
