I’m Larry(etta) The Cable [Gal] & I bring you Ghirardelli Triple Chocolate Truffle Brownies

For those of you who don’t know (first of all, SPOILER ALERT), The Cable Guy is about…well, a cable guy who goes a little bit cray-cray and obsessively tries to be friends with Ferris Bueller.  I mean who WOULDN’T want to be friends with Ferris Bueller?!  But really, I just recently watched it for the first time and it wasn’t until last night that I thought to myself, “OH SHIT.  Am I The Cable [Gal]?!?”

Side note:  I totally thought that Larry The Cable Guy = The Cable Guy.  Clearly I was wrong and I’m glad my friend pointed it out to me buuut since the title tickled my fancy, I decided to keep it but edit this post accordingly :P

Now, before you block me forever from your blog, email, Facebook account…or even real life…hear me out! I…tend to get too damn overly excited about things for my own good.  This results in a lot of very enthusiastic & animated dialogue/monologues, laughing, and very attractive snorting if you’re just that funny.  That being said, sometimes I can overwhelm people with my personality.

Remember the guy who told me he hated me the first 10 weeks I knew him?  No?  Reread that post, betches.  I’ll wait.

Well, even though he ended up really liking me, that whole not liking me in the beginning but inevitably loving me to pieces (not sexually) is quite common with me for some reason. Once he stopped being a jealous hater, he realized that I was still right there waiting for him to wise up so we could laugh the day away.  Now hold up, there are the people who are immediately just as weird and overly excited about everything from the moment I just met them (cyber-ly), and those folks and I are kindred spirits I tell ya!!

It’s always so great to meet these people and have them be just as eager to laugh and chat about the most awesome things.  Like leaving cauliflower sprigs underneath your armpits to make Pinterest-inspired ornaments.  Thanks David (<– He’s HILARIOUS).  Or (whilst dancing), talking about favorite foods or how to pronounce each others’ names.  Thanks Tahira (<– She’s a motherf’ing MAGICIAN with her illustrations. Seriously, check them out) :)

I know it’ll take everyone else a little while longer to warm up to me since I can be off-the-wall intense at times but I know they’ll turn around.  Because truth is, I know no other me.  AND I LOVE IT :D

So while I might come off a little strong sometimes, believe me, I’m not trying to break into your apartment and leave you the newest, coolest, big screen TV or hook you up with a hired hooker I paid for myself (shit, that was another spoiler, sorry!!).  All I’m saying is, I’m the kind of person who likes to find out people’s (healthy, non-creepy) obsessions that make them happy and see what I can do.  I know that every time one of you (real life and facebook friends) bakes me something because I made you your favorite dish or sends a Batman-related picture my way…it makes my heart swell and I want to give back to everyone around me.

Luckily, I found other loving weirdos just like me (I mean that in the BEST way possible :)).  Tahira, I’m so excited to send you my doodle in exchange for yours AND to get all your artwork in the mail that I ordered!! :D  And David, I’ve been brainstorming that buffalo chicken nacho recipe, buddy, since you LOOOVE nachos so much.  In case you didn’t know, we deemed ourselves The Three Weirdsketeers (I came up with the name, thank you very much!! :P).  I think it’s very fitting and I love that I can be as weird as I want with those two and they to me :D

Now, here are those Ghirardelli Triple Chocolate Truffle Brownies you poor fools have been craving through many, many posts ;)  Just a note, I have shitty knives, hence the lack of prime brownie physique.  Tastes fucking amazing though.

Ghirardelli Triple Chocolate Truffle Brownies

Ingredients:

For the brownies…

  • 1 packet of Ghirardelli Triple Chocolate Brownie mix
  • 3/4 cup milk
  • 1/2 cup coffee
  • 1 stick of butter
  • 1.5 tsp vanilla extract
  • 1 TBSP cocoa powder
  • 2 eggs

For the truffle layer…

  • 1 package of regular (not double-stuffed) Oreos
  • 1 block of cream cheese, softened

For the chocolate layer…

  • 1 (10 oz) bag of semisweet chocolate
  • 1 tsp of Crisco

Equipment:

  • 9×13 baking pan, parchment paper, rubber spatula
  • Hand mixer, large mixing bowl, Saran Wrap
  • Food processor, medium microwaveable bowl

Steps:

  1. Throw all your ingredients for the brownies into a large mixing bowl and mix until well incorporated using a hand mixer.  Use a rubber spatula to scrape down the sides as need.
  2. Line a 9×13 baking pan with a piece of parchment paper, making sure to crease the corners so the paper hugs the pan.
  3. Pour the brownie batter into the lined pan (and resist the lick the spatula) and bake at 325 degrees F for 30-35 mins.
  4. Let sit for 10-15 mins before removing the brownies from the pan (using the parchment paper) and cool on wire racks.
  5. Meanwhile, make your Oreo truffle layer by crushing the Oreos finely in your food processor.  If no FP is readily available, use a large ziploc bag and a rolling pin for a good workout.
  6. Add the softened cream cheese cut up into smaller cubes to the food processor and pulse until the mixture resembles a well incorporated kneadable dough.
  7. Remove the Oreo mixture and place it between two large enough pieces of Saran Wrap to cover the 9×13 baking pan area.  Place the Oreo-mixture-filled Saran Wrap into the baking pan and begin to flatten the mixture using your hands.

  9. Flatten until the mixture is evenly spread to all four corners of the pan.  Chill in the fridge as the brownies finish cooling.
  10. Once the brownies are fully cooled, remove the truffle layer from the fridge and place on top of the brownies.  Shape the corners and edges so the truffle layer lines up directly with the brownie layer.
  11. Melt your chocolate in a microwaveable bowl and stir in 1 tsp of Crisco so the chocolate is easily spreadable.  Pour chocolate onto truffle layer and spread evenly to all corners and edges using a clean spatula.

  13. Let set in fridge for at least one hour.  Remove and slice immediately using sharp knife.  Store in airtight containers at cool room temperature.

These decadent babies are perfect with a nice, cold glass of milk!!  See you Sunday for an all new post!!  It’s a surprise only because even I don’t know what I’m going to write about… :)

    AH! Lost my connection when I liked your post! I guess my laptop couldn’t handle the awesomeness of it haha. Thank you SO much. This is so so sweet of you :D I’m pretty similar when it comes to making others happy. I can’t help it haha. I just love to see smiles and happiness as it only fuels my own.       Ummmm soooo I made both in one day for Christmas so I wouldn’t ask for my opinion on that. Haha. It took a very long time though and I was tired after so I’d break it up so you have a more enjoyable baking/cooking experience :)

  9. Holy cannoli. That looks delicious. One of the reasons I don’t really like brownies is because they’re either too dry, or too wet. These look perfect.

      Haha!! I dance everywhere I can and am very high energy. Luckily that helps keep my love handles in check because I bake anywhere from one time a week up to 5 times a week. Really trying my best to cut down to only once or twice a week. Haha.

      Hahaha!! I just meant that sometimes I get overly excited when it comes to new friends so those who don’t know me well may get slightly overwhelmed by my onslaught of excitement :P
