Lazy days mean a half-assed dessert: Rice Krispies Treats

All I did this weekend was sleep in, lay on my couch, and watch TV.  It was freaking amazing!!  The last time I had a relaxing day was when I was in Lyon several months ago.  Seriously.  I titled that post Most Relaxing Day Ever because it really was.  Of course, while Lyon was filled with beautiful scenery, this past weekend was just as satisfying even though I don’t even remember what shows I fried my brain with.

I never watch tv because I know once I start, I can’t stop.  It’s like Pringles.  I know my addiction to mindlessly watching random shows, hence why I shy away from it and usually run around experiencing new things instead.

Even though I love sleeping in and relaxing all day in front of the TV, I can’t stand those aching headaches I get from couch-potatoing it ALL DAY.  Y’all know what I’m talking about, right?  That annoying headache that creeps up on you and attempts to ruin your hermit ways?  Frustrating.

I think my body doesn’t know what to do with all this sleep and relaxation.  It’s like whaaaatttttt…?  You’re NOT running on 4 hours of sleep and you don’t have to trek to events based in 5 cities all in one day…?  What’s wrong with you, ya lazy ass?!?

I always feel guilty.  Always.  All 4 times a year that I partake in these brainless activities.

I dragged myself off of the couch Saturday evening, wholeheartedly believing I would make some dessert and then head off to a Tae Kwon Do reunion that was taking place.  Well Mr. Headache decided to spoil my fun and I barely finished the Rice Krispies Treats (simplest dessert EVER!) before collapsing again on the couch.  I was in this weird stupor all weekend and while it was relaxing, it was unsettling to sit there the entire time.  All in all, I’m glad I took a break.  I think my body needed it with all the self-induced travel I’ve been medicating myself with and all the long hours at work to ensure I finished everything.

So here’s my half-assed dessert as I like to call it because it’s completely simplified.  I thought of ways to complicate it, trust me, I just didn’t have the energy to.  As for the few pieces that I cut into pumpkins and bat-shapes using my cookie cutters…well those ended up in my belly…along with half the batch of Rice Krispies Treats I made.  Hence my need to bring these babies into work so that they can be devoured by others.  Aaand they’re all gone.  Yup, just checked.  Phew.  I’m safe from these deliciously easy demons.  Enjoy.

Vyvacious || Rice Krispies Treats

Rice Krispies Treats

Ingredients:

  • 1 box Rice Krispies cereal (approx. 12 cups)
  • 1 stick of butter, halved
  • 2 (10 oz) bags of marshmallows

Equipment:

  • Large microwave-safe bowl
  • Parchment paper
  • 9×13 baking pan
  • Rubber spatula
  • Large Knife

Instructions:

  1. Line the 9×13 baking pan with a sheet of parchment paper.
  2. Place one (10 oz) bag of marshmallows into the large microwave-safe bowl and add the half stick of butter on top.  Microwave for 90 seconds to 2 minutes.  Watch the marshmallows carefully to make sure they don’t overflow when they puff up.
  3. Mix the melted butter and marshmallows lightly with the rubber spatula and add half the Rice Krispies cereal (approx. 6 cups) to the melted mixture.  Stir quickly until everything is evenly incorporated.
  4. Transfer the mixture to the parchment paper-lined baking pan and use the rubber spatula to move the mixture to all 4 corners and edges.  Use a sheet of parchment paper to really smooth out the mixture if you want uniformity in shape/size of your treats.
  5. Wait until the Rice Krispies Treats have cooled and set before cutting into uniform squares with a large knife.  Store in an airtight container at room temperature.

  3. I am also a sucker for rice krispie treats — besides the sticky clean up they really are SO easy. And so satisfying to eat!

      The homemade version always blows the preserved store-bought kind out of the water!

      My problem is I can’t STOP eating them… I have to package them up quickly to give away otherwise I’m screwed.

    I’ve had one of those lazy days before. One of the best weekends ever! Haha.
    All I did was lounge around in pj’s and watched “the walking dead” all day! That’s how I caught up. :D

    Oh, and homemade rice krispies treats definitely beat store bought ones that are full of preservatives. My mom usually makes them, and likes to add little extra surprises like m&m’s or peanuts.

    Awesome post. Rice Krispy treats are one of my absolute favorite desserts, but I only started making my own recently. I did a butterfinger version that was amazing. Yum! So good.
